Scotch Breakfast Eggs

Ingredients

  • 6 medium Eggs
  • Cooking Spray
  • 6 Pork Sausage Patties

Instructions

  • Preheat oven to 350°F
  • Put eggs in saucepan large enough to hold them in single layer
  • Add cold water to cover eggs by 1 inch
  • Heat over high heat just to boiling
  • Remove from burner
  • Cover pan
  • Let eggs stand in hot water for 12 minutes
  • Drain immediately
  • Cool eggs completely under cold running water
  • Remove shells from the hardboiled eggs
  • Spray casserole dish with cooking spray
  • Place eggs into the casserole dish
  • Press sausage patties over eggs
  • Bake 20 minutes in preheated oven or until the sausage patties are brown and well-cooked
  • Serve
