Red Beans & Rice

Red Beans & Rice

Course: Main Dish
Cuisine: American

Ingredients

  • 1 medium Onion
  • 1 medium Green Bell Pepper
  • 2 stalks Celery
  • 14 ounces Smoked Sausage
  • 2 cloves Minced Garlic
  • 30 ounces Kidney beans canned
  • 14 ounces Chicken Broth
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • Hot cooked long-grain white rice

Instructions

  • Preheat skillet on medium-high heat
  • Chop onion
  • Chop bell pepper
  • Chop celery
  • Rinse & drain beans
  • Cut smoked sausage into 1/2-inch slices
  • Add sausage, onion, green pepper, celery, and minced garlic to preheated skillet
  • Cook, stirring frequently, for 7 minutes
  • Add kidney beans, chicken broth, oregano, and thyme
  • Bring to a boil
  • Reduce heat to medium
  • Cook 15 minutes until slightly thickened
  • Cook rice according to directions
  • Serve
