Roasted Garlic Potatoes

Roasted Garlic Potatoes

Ingredients

  • Cooking Spray
  • 1/2 cup Vegetable Oil
  • 4 medium Potatoes
  • 1/4 teaspoon Salt
  • 1 tablespoon Dried Parsley
  • 2 tablespoons Garlic Powder

Instructions

  • Preheat the oven to 450F
  • Spray the roasting pan with cooking spray
  • Pour vegetable oil into roasting pan
  • Put the roasting pan into the oven while it preheats
  • Swirl the oil in the pan to coat then entire interior surface
  • Wash the potatoes
  • Cut the potatoes into 1 inch cubes
  • Fill the large pot with water
  • Bring the water to a boil over high heat
  • Add the cubed potatoes to the boiling water
  • Bring the water back to a boil
  • Simmer for 5 minutes
  • Drain the water from the potatoes
  • Remove the heated pan from the preheated oven
  • Pour the drained potatoes onto the heated pan in a single layer
  • Toss the potatoes to coat them with the hot oil
  • Sprinkle the garlic powder evenly over the potatoes
  • Toss the potatoes again to distribute the garlic powder
  • Return the pan to the oven
  • Roast for 40 minutes, stirring the potatoes every 10 minutes
  • Sprinkle with salt and pepper to taste
  • Sprinkle the parsley evenly over the potatoes
  • Serve
